Skinny Broccoli Cheddar Potato Skins

The other night we were in the mood for something comforting and these were the perfect snack…they are warm and cheesy and GUILT FREE! Skins of potatoes contain a ton of fiber and of course the broccoli is fantastic for you. Making potato skins this way is actually healthy (without all the sour cream, butter, bacon, grease, etc…yuck!).

These are perfect as an appetizer or side dish. They take minutes to throw together thanks to using the microwave. You only use the oven to melt the cheese! These would be great with some crumbled turkey bacon on top too, or a bit of greek yogurt if you like your potato skins creamy. You can easily increase or decrease the recipe depending on the number of people who will be snacking on these!

Skinny Broccoli Cheddar Potato Skins (Serves 2)

Adapted from Gina’s Skinny Recipes

Ingredients:

  • 2 medium russet potatoes, scrubbed clean and dry
  • Spray oil
  • salt and pepper
  • 2 oz shredded sharp cheddar (low-fat is best for keeping calorie count down on these but you can use whatever cheese you like)
  • 1 cup cooked broccoli florets, chopped

Directions:

  • Heat oven to 450
  • Pierce potatoes with a fork a few times all around.
  • Wrap potatoes in paper towel to seal in heat/steam and place in microwave.
  • Cook about 5 minutes per potato. When finished, allow to cool enough to handle.
  • Cut potatoes in half horizontally. Scoop out potatoes leaving about 1/4 inch thick wall.
  • Lightly spray potato skins on both sides with oil. Season both sides with salt and pepper.
  • Fill with cheese and broccoli, place on a broiler pan and bake 10 minutes or until cheese is melted.
