Skinny Parmesan Breaded Chicken & Balsamic Shaved Brussels Sprouts with Prosciutto

So, this is one of the tastiest chicken dishes I’ve ever made.  Seriously.  This recipe (and of course this one) are in regular rotation now.  The chicken is really simple to make, you just dip it in a mixture of olive oil and lemon juice, then bread it in a combination of parmesan cheese and italian bread crumbs.  Yup, that’s it.  Then you bake it in the oven.  no frying, no butter.  The chicken comes out juicy, nicely breaded and full of flavor!

The side dish is from a recipe I got off the Trader Joe’s shaved Brussels Sprouts bag.  I just added prosciutto to it so Jon would find the idea of trying the Brussels more appealing.  He is so put off by the thought of these veggies but he bucked up and took a bite.  Then he proceeded to devour his entire plate of chicken AND Brussels and finish off the rest of the sprouts from the pan.  They are THAT good.  The fact that they are shaved makes it taste more like a hash, and it’s absolutely delicious.

The Brussels dish is a bit ugly because the balsamic vinegar turns them brown, but it tastes AMAZING.  I promise.  If Jon will eat it and love it, your kids, husbands, picky friends will likely do the same!

Skinny Parmesan Breaded Chicken

(Makes 6 pieces of chicken–i suggest giving each person 2 pieces so this serves 3)

Adapted from Gina’s Skinny Recipes


  • 24 oz (3) boneless skinless chicken breasts, sliced in half lengthwise (butterflied)
  • 3/4 cup Italian seasoned breadcrumbs
  • 1/3 cup grated Parmesan
  • juice of 1 lemon
  • 1 tbsp olive oil
  • kosher salt
  • fresh cracked black pepper
  • cooking spray (olive oil spray is best for browning purposes but regular PAM works too)


  • Preheat oven to 450°.  Place a large baking pan in the oven to get hot.
  • Combine breadcrumbs and grated cheese in one bowl. In another bowl combine olive oil, lemon juice, and pepper.
  • Lightly pound chicken breasts into cutlets, you should have 6. Wash and dry (dry really well) cutlets with paper towels; season with salt and pepper.
  • Dip cutlets into lemon/oil mixture, then into breadcrumbs/cheese combo, pressing firmly to adhere.
  • Remove the baking pan from the oven and spray with cooking spray. Place the chicken on the baking sheets and spray with olive oil spray on top.
  • Bake chicken, turning once halfway through for about 15 minutes total, or until chicken is golden.
  • Remove from the oven and serve with Balsamic Shaved Brussels, recipe below, or another one of my delicious side dishes!

Balsamic Shaved Brussels Sprouts with Prosciutto   (Serves 4-6)

Adapted from Trader Joes


  • 1 10 oz bag of Trader Joe’s Shaved Brussels Sprouts (or get regular Brussels and clean and shave them yourself)
  • 2 tbsp olive oil
  • 1-2 slices of Prosciutto, chopped up
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of water


  • Heat oil in large skillet over medium-high heat
  • Add Prosciutto and cook until lightly browned (about 3-5 minutes)
  • Add Brussels and saute until slightly crisp and brown (about 5 minutes)
  • Season to taste with salt and pepper
  • Pour in vinegar and water at the same time, cover with a lid and steam over medium-high heat until tender (about 5 minutes)
    Enjoy right away!
