Jon was out of town recently so our sweet friends Renee and Nima invited me over for a little dinner party to keep me company! Nima made homemade pasta and Renee and I made a delightful balsamic glazed salmon and parmesan lemon asparagus. It was an absolutely delicious dinner that we will definitely be making again, so I had to share the salmon recipe with you! It’s also super easy, like all the dishes on my blog!

This salmon dish is now one of my absolute favorites (try my other fave salmon recipes here and here). The sweet and tangy flavors compliment the fish so well, you want to lick your plate when it’s gone!

Balsamic Glazed Salmon (Serves 4)
From Taste of Home
Ingredients:
- 4 salmon fillets ( about 4 ounces each)
- 4 garlic cloves, minced
- 1 teaspoon olive oil
- 1/3 cup balsamic vinegar
- 4 teaspoons Dijon mustard
- 1 tablespoon white wine (or water)
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
Directions:
- Preheat oven to 425.
- Line a large baking pan with foil; coat foil with cooking spray. Set aside.
- In a small saucepan, saute garlic in oil over medium low heat until tender.
- Stir in the vinegar, mustard, wine, honey, salt and pepper. Bring to a boil.
- Reduce heat and simmer, uncovered, for 3-5 minutes or until slightly thickened. Set aside 2 tablespoons for basting.
- Place fillets on the prepared pan. Brush with sauce and sprinkle with oregano.
- Bake, uncovered, at 425 for 15-20 minutes or until salmon flakes easily with a fork. Brush with reserved sauce before serving.
We have tilapia in our freezer right now, and I have no idea what to do with it!! Do you think this recipe would work with that?!
