I loooove Sriracha. I’ve been looking for a way to cook with it and this recipe was perfection. After marinating the chicken in Sriracha, honey, orange juice, barbecue sauce and mustard we grilled it on our Foreman, sliced it into strips and put the chicken on top of fresh arugula. It was such a refreshing summer salad with delicious sweet and spicy flavors. You can pick any lettuce or green you like, or you don’t have to make this as a salad at all. The chicken on its own is fantastic. I’m just always looking for new ways to eat arugula!
Honey Sriracha Grilled Chicken Salad (Serves 2-4)
- 2-4 chicken breasts..depending on how many people are eating
- 1/4 cup barbecue sauce
- 1 tablespoon Sriracha sauce
- 1/4 cup honey
- 1/4 cup stone ground mustard
- 1 tablespoon grated orange zest
- 1/4 cup orange juice
- Prepare the marinade
Combine all the ingredients in a large bowl and marinate the chicken for at least 1 hour in the refrigerator.
Preheat the grill and grill the chicken for 7-8 minutes per side or until no longer pink. (we used a Foreman Grill)
Remove from the grill, slice into strips and lay the chicken on top of arugula, spinach, field greens, or your favorite greens!
